When we got back down to the FBO office they signed me up all right. I got my lesson manuals, a list of books to read, cover to cover. I got my checklists and I had to buy some instruments and tools for aviating. It’s really very involved. I had to enroll in ground school and schedule flying lessons. We followed a proven agenda for training pilots.

I learned fast and in a few months I was taking friends for sight seeing trips! What a time! But I had to work for it. I was taught by pros. And, you know what? You need to be taught by pros.

After I had bought several programs that promised me riches on the internet and was going nowhere I found Lance Profit. Kind of a weird name, isn’t it? In my neck of the woods over the last few years the ‘Chocolate Restaurant’ concept has grown in popularity, there is usually one in every shopping mall where you will see people both young and old sipping and dipping from little pots of melted chocolate or smiling and making that heavenly expression of rapture as they savour the sweet gooeyness of a chocolate pizza! Whoa, rewind there…chocolate pizza? Yes chocolate pizza. And what goes better with chocolate than banana?

 

Chocolate and Banana Pizza

 

Makes 4*

 

Let’s start with the base.

 

As kids parties or any party for that matter are my thing I like to keep it as simple but of course delicious as possible. You could make your own base, but if time is of the essence which it usually is for me I recommend a sheet of frozen puff pastry.

 

For the topping:

 



200g (7oz) block of dark chocolate (Choc chips are not recommended as they contain vegetable oil which is not great when melting, hence they retain their shape when used in cookies or muffins)

60g (2.12oz) unsalted butter

100mls (3.5 fl.oz) of thickened cream

4 bananas, just ripe

Lemon Juice

Handful of mini marshmallows

Vanilla ice-cream (optional)



 

Method

 



Defrost and cut sheet of pastry into 4 squares

Place chopped chocolate, cream and butter over a double boiler (boiling water in pan with bowl for chocolate sitting above) stirring gently and continuously to keep from overheating. What you are creating here is simply a ganache.

Spread chocolate over the pastry bases**

Peel and slice bananas and toss in lemon juice then arrange over pizza

Lastly sprinkle with mini marshmallows

Place on a tray (spray with oil if you don’t have silicone tray) and pop in oven at 180°C for around 5 minutes or until pastry edges puff and are a golden colour.



 

To Serve

 

You can make these ahead of time and serve cold, but for a truly delicious experience serve hot with a scoop of ice-cream plonked on top, and for an even more delicious experience, if that’s possible, roll the scoop of ice-cream in icing sugar first.

 

*It is possible to spread this topping further to 6 or even 8 pizzas, but I’ll leave that up to you to decide.

 

**If you like you can make the chocolate topping ahead of time and place in oven to set then when you are ready to construct the pizza chop the chocolate into squares and sprinkle over the pizza. They will melt into lovely globs of sweetness.

If we see something in a reading that we do not like then we have the choice to do something about changing that thing.

• Tarot is evil. Also described as the “Devil’s Picture Book”. It is human nature to be afraid of something that is not fully understood or what is viewed as threatening. True, some of the images may be a bit scary in some decks but so are some great works of art – they aren’t thought of as evil.

Lamium

Also know as White Nancy, Lamium is a beautiful ground-covering plant with white heart-shaped leaves and short spikes of pink flowers. Lamium blooms in the summer, grows up to eight inches tall and can tolerate a wide variety of soil conditions. It does best in shady woodland areas.

Portulaca

Portulaca is a group of annual flowers that comes in several varieties. Native to Brazil, Portulaca grow spiraling stems up to five inches long and have cylindrical leaves and bright, colorful flowers up to an inch in diameter at the end of the stems. The flowers can be purple, yellow, pink, scarlet and many other colors. To cultivate Portulaca successfully you need to place them in a spot with plenty of sunlight and sandy soil.

Pentas

Simple to cultivate, easy to care for, and beautiful to behold, Pentas is a wonderful choice for your garden. Pentas is native to tropical Africa and its beautiful red, pink, white and lavender blooms are well-known for attracting hummingbirds. The plant grows up to three feet tall and wide and does well indoors, potted in a sunny spot or outside in warmer climates.

Lavatera

Though named for a Swiss botanist, Lavatera are native to the Himalayan Mountains, Siberia and Australia. These plants come in several varieties, both perennial and annual, with bush-like growth or tall straight stalks. Their large, beautiful flowers last only a day or two before wilting, but the plant produces new flowers for an extended period of time.

Sedum

Sedum, which come in hundreds of varieties, are easy to grow, late-blooming, hardy and beautiful plants. Sedum plants have thick stems, fleshy leaves, and flower heads that resemble lavender broccoli. These plants do best in well-drained soil and can tolerate both droughts and rainy weather. Because they bloom so late in the year, they often remain attractive through the winter.

Abutilon

Also known as the Flowering Maple, the Abutilon is a beautiful plant that does well indoors. Abutilon’s lovely blossoms range from reds, yellows, blues and shades of orange, and its foliage is usually pale green. Depending on how much space it has to grow, Abutilon plants can grow to be very large, which is why the plant is best kept indoors in a small to medium sized pot.

Gazania

Gazania, native to South Africa, is a beautiful, perennial ground cover with colorful daisy-like flowers. Gazania flowers boom in late spring to early summer and come in shades of yellow, orange, white and pink. Gazania thrive in sunny locations with well-drained soil.

We live in uncertain times. It is always best to be prepared for unexpected events, including food shortages. Knowing how to make jerky is one of the best ways to prepare for any eventuality. Jerky is a great way to store your meat because the process removes almost all of the water and juice out of the meat. When making jerky you can use any kind of meat. The best known is beef jerky. It is very popular because it was the staple of the cowboy and the ranch hand for years. When cowboys were moving a herd of cows from one ranch to another, they would take dehydrated beef with them as rations because food was hard to come by in the wilderness and they needed to save their ammunition in case of emergencies.

Over the centuries, the process of making jerky has become more and more simple. Once, it involved hanging the strips of meat in a smoke house to have all the fat and water smoked out. Now, we have special machines that dehydrate the meat by slowly removing all of the water. This process is faster because of the means by which the meat dehydrates. The only thing that you still have to do is to cut the meat and season it the way you want it.

There are different ways to make beef jerky but several things stay the same. Among them is the preparation. If you know how to make jerky then you know that picking out the meat can be very important. With beef jerky, there are so many cuts of meat to choose from. The best meat for beef jerky should be a lean cut. Using sirloin, as well as top round and eye round will make the dehydration process a lot quicker. Once you have chosen the cut of meat you want, trim off the excess fat. Fat does not dehydrate and can make your jerky rancid or quicker to spoil. After that, begin slicing your meat into thin strips. Less then an eighth of an inch thick is best. If you cannot cut the meat this thin, most butchers will do this for you for free. If you feel confident about doing it yourself, here is a good tip: freezing the meat for about thirty minutes beforehand can make cutting it easier.

There are two ways to cut the meat into the strips. Cutting with the grain can give a nice clean slice of meat. However, it can be a little tough to chew. If you cut the meat against the grain, it will make for a more tender jerky. Make sure that you trim the excess fat off while you are cutting. After you have cut the meat into strips, you can either marinate it, or simply season it and start the dehydration process. If you choose to marinate the strips of meat, you can use a mixture of cider vinegar and sea salt, or any other recipe you prefer. Place the marinating strips in the refrigerator for up to twenty-four hours to let the meat soak in the flavor. However, this process will add moisture and can cause the dehydration process to take longer. It can also make the jerky sticky. Once you have completed this step, you can coat the strips in the seasonings that you choose.

Next, put the meat in a dehydrator. However, before you put them in the dehydrator, you will want to spray the racks of the dehydrator with a non-stick spray first. This will help you pull the meat strips off later on when the jerky is ready. Spread the meat out on the racks evenly making sure that you leave some space between the pieces of meat. This will allow for greater air flow around the meat. It is best to leave the meat in the dehydrator over night. Six to twelve hours is best. When you know how to make jerky, it can be a lot of fun. There are many uses for the dehydrated meat. You can use it as a snack when you are watching television, or if you are out for a hike. You can enjoy it for a long time and it is easy to make.
